Vegan Sloppy Joe - So Good You'll Want to Bathe in It

This post has absolutely nothing to do with Janice Dickenson but I've been waiting to use that picture for so long that I figured now is just as good a time as any. Now, to what you came here for...I could go on and on about my love for Morningstar Farms vegan crumbles. I already may have done so during my vegan taco salad post. What makes it so wonderful is the way it blends so easily into any recipe that calls for ground beef. The vegan sloppy joe recipe is a great way to easily get comfortable with healthier eating; in fact the hardest part of eating this is saying goodbye to that last bite.

The best way to stretch this meal out? Add a side of corn and sweet potato fries to your plate. Shut my mouth right? I KNOW! Seriously, sweet potato fries exist and they are freaking a-to the-mazing. I don't even like sweet potatoes (ok, I haven't actually tried them but they've always scared me) but these make me want to shout about my love from the tops of skyscrapers.

Here's what you'll need:
1 bag Morningstar Farms crumbles (or whatever brand you like)
1 can vegan sloppy joe sauce (check the labels...most of them are vegan but be careful because some contain MSG and you don't want any of that crap)
A bag of small whole wheat buns
Frozen corn
1 bag Trader Joe's sweet potato fries (or you can make your own but I haven't tried that yet)

How to cook (this is so easy you may want to drink a six pack of cider beer before even getting started!):

Preheat your oven according to the directions on the back of the sweet potato fry bag. Plop that bag of vegan crumbles into a medium sauce pan with about an eighth of a cup of water and let it cook through for about two minutes. Once it has started cooking add the sloppy joe sauce, stir it in, cover and let it do its job. Get your corn ready by putting water in a pot, adding the corn and cooking it to your liking. When you feel as though the sauce and crumbles are sufficiently cooked through and you want to throw your head face first into the pan just to get close to it - put the heat on low and maybe grab another beer. Get those sweet potato fries into the oven and let those babies cook with a dash of kosher salt on top. Is your mouth watering yet? Mine is. Next, put your buns into a toaster oven (or a regular toaster) and get them ready to be plated. When the sweet potato fries are finished, get ready to serve this sucker up and enjoy.
