I know what you're thinking, "Vegan? Ew! No freaking way!". I know this because a couple of years ago my stomach would have turned and my gag reflex would've been in full effect even if I didn't know what went into the salad. Oh but this recipe is so delicious it makes me want to smack everyone who works at Morningstar Farms on the ass for a job well done. Not only is this a vegan recipe, it is also low in calories and fat and high in fiber. I kid you not, this is so good you're probably going to want to make out with me after you try it.
Here's what you need (and keep in mind this makes about 4 servings so add or subtract accordingly):
1 package Morningstar Farms Meal Starters Grillers Recipe Crumbles
1 taco seasoning packet
3/4 cup chopped onions
1 cup tomato chopped
1 bag of your favorite lettuce (I like the mixed greens and it looks really pretty too)
1 can black beans
1 avocado
Salsa
Giardeniera (optional)
What to do: In a medium sauce pan, put the bag of crumbles on a medium heat covered. Cook for about two minutes then add the taco seasoning and however much water they tell you to mix with it and let that simmer. In a small pot cook the black beans on medium heat.
Put your lettuce on your plate. Add however much onion and tomato you want (if you want any at all). When the beans and crumbles are finished cooking add 1/4 cup of the beans and 2/3 cup of the crumbles on top of your lettuce. Use the salsa as your dressing instead of whatever you would normally use. For those of you who like to spice things up as much as I do - add a Tbsp of hot giardeniera. For a richer taste, add a 1/4 of an avocado to that.
