Fiber One? Fiber Fun!

Raise your hand if you drank too many margaritas this weekend then followed them up with chips, salsa, avocado tacos and some Jack Daniels for dessert. My weekday food needs to be drastically different than my weekend menu (the couscous salad was a hit by the way). I allow myself to go a little overboard on the weekends because all work and no play makes Chubby one cranky biatch. Everyone should fear the wrath of a hungry girl, trust me on this one. I've got a secret weapon in the battle of the bulge though. Gather round children and I will tell you the tale of a food that looks like twigs but tastes surprisingly good!

I'm not sure if the inventors of Fiber One set out to make the most aesthetically displeasing cereal out there - but they did. It is brown, plain, boring and looks like what you might be forced to eat if you got lost in the wilderness. At no point do I look at that cereal and say, "Wow, now that really looks delicious!" No, when I see a bowl of Fiber One all I can think is, "I'm probably gonna have to be near a bathroom when I'm done."

When I first tried this fibrous cereal I hated it. I couldn't understand why even the most constipated person on earth would want to eat it. Oh my; how things change. I don't know if I should be worried that I'm getting old or if the people who make Fiber One have just done an amazing job of injecting some delicious flavor into these little crunchy bits. You can pin a button on my lapel and call me a fan. It's gotten to the point where I crave the stuff. Not only is it great as a cereal (add blueberries and you will be amazed) but you can also use it as a great substitute for less-healthy ingredients. For example, here is Hungry Girl's Fiber One Mozzarella Sticks recipe! Since I'm a vegan I'll have to do some tweaking to get rid of the dairy but I can't wait to try it out.
