I'm going to see Feist perform tonight at an outdoor venue which -unlike most venues - allows its patrons to bring their own food and drink into the park. It's basically a gigantic picnic area that also happens to have amazing artists grace their stage. The thing is, if you go, you pretty much need to bring food because if you don't you'll just be envious of everyone around you. Even if you aren't hungry you're going to want to eat, drink and be merry - and no it's not just the chubby people who overeat when they get to this place, it's everyone!
Since I know I'll be partaking in the festivities and in an odd change of alcohol preferences have opted for a refreshing cider beer to take with me, I wanted to make sure the food I'll be overeating will at least be a healthier choice. It's going to be in the 90's today and since there's no where to heat things up I had to find an option that could travel well and not need refrigeration. So, I opted for a delicious couscous salad that I pretty much threw together with whatever I had available in my cabinet.
Here's what you'll need:

1 package of your favorite flavor couscous (pine nut is a really great option)
1/3 cup chopped onion
1/3 cup green pepper
1 Tbsp olive oil (for the couscous)
1/2 cup tomato chopped
2 Tbsp balsamic vinegar
Salt and pepper to taste
This is so easy your five year old cousin twice removed could make it in their Easy Bake Oven. Make the couscous like the directions say on the box. Once it has cooled off a bit and you've fluffed it, pour it into a serving dish and simply toss all of the other ingredients on top - making sure the balsamic is spread fairly evenly. Throw it into the refrigerator, do the electric slide and be prepared to receive high fives all around.
